Pineapple with Ginger and Vanilla

Ingredients:

1, 3-inch piece fresh ginger, peeled and thinly sliced

1 vanilla bean, split and scraped

1/3 cup honey

2/3 cup water

1 fresh pineapple, whole

Candied ginger, slivered, for garnish

Directions:

  1. In small saucepan, combine fresh ginger, vanilla seeds, honey and water.  Bring to a boil and then reduce heat to simmer for 5-10 minutes until thickened into syrup.
  2. Meanwhile, peel and cut pineapple into 1/2-inch thick rounds and remove the core.
  3. In large plastic bag, combine pineapple and syrup.  Refrigerate for at least 1 hour, or up to 3 days.
  4. To serve, stack pineapple slices on plate and strain syrup over top.  Garnish with slivers of candied ginger.
